Burgundian summers are long and warm, ideal for ripening the grapes, and most of the region’s rain falls in the hilly Morvan area during winter.
Wine & Cuisine
This is a ‘foodie’ region and home to cuisine classique, with much of the cooking centred on wine-based sauces known as meurettes. Boeuf bourgignon, escargots and coq au vin require little introduction and Moutarde de Dijon features regularly also. The wine in this region is really outstanding, changing with the subtleties of the underlying soil. A superb goats cheese, the crottin de chavignol, is perfect with a glass of full bodied red, perhaps a Côtes de Beaune, with its aromatic bouquet? Côtes du Nuits, is also a well known classic red with a deep colour. Near Auxerre, Chablis produces its delicious flinty, dry white Chardonnay. But don’t ignore the more southerly Mâconnais whites and reds. You really are spoilt for choice.
